Job Description

1. Checks, reviews and maintains HACCP manual and timely updates it as needed and directed by the Superiors and external HACCP Auditor. 2. Initiates, participates and coordinates all HACCP meeting on a regular basis, whether weekly or monthly, for purposes of continual improvement and effective function of the implemented HACCP system. 3. Leads in front for Dubai Municipality inspection whenever random checks and ensures all documents related to HACCP and food safety; which includes food protection, employee’s responsibilities, food equipment, utensil use, good food hygiene and safety practices are in place, updated and ready for presentation whenever requested. 4. Training on the food watch in Dubai Municipality and explore the new updates and procedures related to food hygiene 5. To setup the hygiene plan for the production unit in Al Ferdous, in addition to the sources in and out procedures for the internal drivers and external vendors, as per the HACCP requirements and DM. 6. Reviews, and prepares cleaning schedules as required and gives instruction to staff concern according to the HACCP standards.

Job Requirements

Monitors all relevant equipment and areas for proper sanitation. Ensures that the facility in the kitchen and other areas of concern are completely hygienic and safe from any potential hazards (physical, chemical and microbiological) Monitors all food handlers’ cards on a regular basis and coordinates with the HR as and when required for the renewal. Hourly and random inspection for all CCPs to make sure that there is no deviation from standard critical limits. To coordinate the HACCP implementation for Central Kitchen with the third-party consultant. Monitors and verifies as needed, process control procedures based on determined CCPs. Trains and implements food safety (Basic Food Hygiene and HACCP Awareness) in consultation with the HR and Training department. Verifies raw ingredient specifications based on certificate of analysis and specifications rom suppliers. Adheres to the standard operating procedures, policies and/or work instructions. Monitors the calibration of scales, thermometers, chillers, freezers and vehicles as required by the Dubai Municipality and as per HACCP standards. Implements an element of carrying out this responsibility and accountability for all HACCP procedures and documentations and have an efficient trace back program to follow-up on the pending points, critical issues and corrective measures.
